EU Butter Market Holds Flat as Protein Complex Tightens

EU butter prices are stable but under pressure from soft fat demand, while skim milk powder strengthens. Concise outlook for Q4 2026 trading.

Butter prices in continental Europe are currently moving sideways: branded butter is stable around the upper EUR 4/kg range, while spot indications for bulk butter show little change. At the same time, tightening conditions in the protein complex – led by firmer skim milk powder – are gradually improving the value of milk solids, even as butter remains comparatively weak. After a long period of volatility, the butter market has shifted into a holding pattern. Wholesale branded and bulk quotations were unchanged on 28 October 2026, and Polish fresh butter offers also show no movement in the last week. In contrast, food‑grade skim milk powder has nudged higher, reinforcing the picture of proteins leading the recovery while fat trades under structural pressure from ample cream and cautious demand in retail and food service. The balance between these segments will define Q4 margins and trading opportunities.

Prices

As of 28 October 2026, branded butter in consumer-ready form is quoted at 4.68 EUR/kg (range 4.35–5.00 EUR/kg), unchanged from the previous quotation. Bulk branded butter is assessed at 4.15 EUR/kg (range 4.05–4.25 EUR/kg), also flat day-on-day. Food-grade skim milk powder stands at 3,665.00 EUR/t (range 3,600.00–3,730.00 EUR/t), up 15.00 EUR/t, while feed-grade SMP is stable at 3,495.00 EUR/t (3,470.00–3,520.00 EUR/t).

On the physical market, a Polish fresh 82% butter offer ex Grudziądz, FCA, is indicated at 3.65 EUR/kg on 28 October 2026, unchanged from the previous week and confirming the absence of short-term price momentum at the lower end of the EU spectrum. At the broader EU level, reference indications point to wholesale butter around 4,000 EUR/t for mid-October, down modestly month-on-month and well below last year’s levels, underlining how depressed EU butter values remain compared with the 2024–2025 peak.

Supply & Demand

Current price relationships suggest that fat remains relatively abundant while protein has tightened. Slightly higher food-grade SMP prices, alongside stable feed-grade SMP, indicate firm demand from food and export segments and a gradual rebalancing of milk solids away from surplus conditions earlier in 2026. External benchmarks show EU SMP significantly higher year-on-year and trading at a premium to many competing origins, signalling improved buying interest and tighter supply in that segment.

By contrast, butter continues to trade under structural pressure. EU wholesale averages have eased in recent weeks, and forward market commentary earlier in October highlighted aggressive producer selling and lower offers for Q1 and Q2 2027 contracts, with reported trades in the mid‑3,000 EUR/t range FCA for some origins. This reflects a combination of still ample cream availability and restrained retail and food-service restocking ahead of the winter season, even as overall EU milk output growth remains limited and processors continue to prioritise cheese production at the margin.

Fundamentals

The small but visible rise in food-grade SMP (+15 EUR/t) against flat butter and feed-grade SMP underlines the current fundamental split inside the dairy complex: protein is leading, fat is lagging. External EU price data confirm that SMP has risen markedly since late summer, while butter has either moved sideways or slipped modestly, widening the traditional butter/SMP value spread. This is consistent with a market that has moved beyond the surplus-driven lows of late 2025 but has not yet translated tighter milk balances into a broad-based butter rally.

Forward indicators support this picture. Market reports from early October noted increased liquidity in butter, SMP and cheese, with over 1,000–3,500 tonnes changing hands in some trading sessions and producers increasingly active on the offer side. At the same time, EU Commission reporting for mid-October shows butter prices roughly 30% below year-ago levels, while SMP is more than 50% higher year-on-year. Together, these signals point to a market where processors still find better relative returns in proteins and cheese, limiting the upside for butter despite seasonally firm demand.

Outlook & Trading Ideas

Weather does not currently present an acute threat for Q4 butter supply in the main European producing regions, and no major short-term disruptions are visible in milk collections. As a result, the near-term balance for butter is likely to remain comfortable, with protein dynamics and macro demand conditions (consumer confidence, retail promotions) playing a larger role than weather in shaping prices into year-end.

Trading outlook (next 4–6 weeks)

  • Buyers (retail, industry): Use the current flat price environment to extend coverage modestly into early Q1 2027, focusing on bulk butter around today’s levels while avoiding over-commitment in case further downside emerges from continued producer selling.
  • Sellers (creameries, co-ops): Consider selectively hedging a share of Q1 output where forward values still offer a reasonable margin over current spot cream, but keep flexibility given the supportive backdrop from tightening protein and limited EU milk growth.
  • Traders: Monitor the butter/SMP spread closely. Further firming in SMP without a corresponding move in butter could open opportunities for relative value trades favouring protein over fat, especially if export demand for SMP holds through early 2027.
